Svinatura is an Italian word that refers to the process of vinification—thoroughly extracting the aromas of the flowers, fruits, and leaves of the harvested wine grapes that grew over the seasons. From summer to fall, the leaves turn golden. The whiff of the season’s wine wafts through the air, blends into the sunset, and lights us up from the inside.
